Feliz Cinco De Mayo.



Cinco De Mayo is one of my favorite holidays because it's an excuse to consume two of favorite things; Mexican food and margaritas.  One point of interest to mention- I am a food-snob.  I don't buy bottled salsa and I DON'T buy pre-made margarita mix.  The good news is-- you don't have to either.  These are two of easiest recipes to make.

Please people, however you choose to celebrate, I beg of you to not use those florescent bottled margarita mixers.  They are awful.  You can just as easily make your own.  Here's a recipe for my favorite no-hassle margaritas:

INGREDIENTS
  • 1 (12 oz) can of frozen limeade from concentrate
  • 12 oz. tequila
  • 1 12 oz. bottle of Corona
  • 2 cups ice
  • Salt 
  • Lime Wedges


DIRECTIONS
1.) Combine ingredients 1-4 in blender.
2.)Blend.
3.)Salt rims of glasses.
4.) Garnish with lime wedges.
5.)Pour Margaritas and enjoy!


And here is a no-hassle recipe for salsa:



INGREDIENTS
  • 1 can whole tomatoes
  • 1/2 large red onion
  • 1/2 cup fresh cilantro
  • 2 cloves of garlic
  • 1-2 handfuls of picked jalepenos (how hot do you like it?)
  • 1 (4 oz can) green chiles
  • 1/4 cup red wine vinegar
  • 1 tsp. cumin
  • 1/2 tsp oregano
  • salt and pepper to taste

DIRECTIONS
(You will have to blend in two batches)
1.) Put 1/2 of the ingredients into blender, and blend.
2.) Repeat with the other half.
3.) Pour blended Salsa into bowl and refrigerate.
4.) Stir before serving.
5.) Enjoy!
